この度、新春数量限定で熟成された手摘み碾茶を挽いたお抹茶をご用意致します。
宇治地域ではしっかり肥料を施肥された覆い下茶園の玉露や碾茶が、低温下で熟成された際、「枯れる」などの言葉を使って表現します。勿論、本当に枯れるわけではなく、味のとがりがなくなり、まろやかな旨味と品の良い香りを表現しております。抹茶の原料である碾茶の配合（合組）において宇治の茶師は、代々熟成茶の重要性を理解し大切に扱って参りました。逆に、施肥が少なく覆い日数不足の茶葉は、新茶時期の色は良いのですが、熟成に耐えられず夏を越えてくると色、香りなどが「落ちる」と表現をされます。
今回はしっかり肥料と覆いが効いている熟成された「手摘み碾茶(品種：アサヒ)」を主軸に配合して調製致しました。
